How to Make Freezer Friendly Lasagna Step-by-Step
Prep your ingredients - Gather all your ingredients to be ready for assembly.
Cook your lasagna noodles - Boil a large pot of salted water and cook noodles according to the package, but set a timer for 2 minutes less than recommended. This ensures they are al-dente and won’t get mushy when they are frozen and reheated. Drain and cut in half. Whether you use regular lasagna noodles or no-boil, cut them lengthwise in half, to easily stack in the 2-cup trays.

Prepare the Ricotta Mix - Mix ricotta, egg, parmesan, and parsley in a bowl.

Assemble the lasagna - Build by placing sauce on the bottom, add noodle, ricotta mixture, mozzarella cheese. Then repeat, finishing with sauce and mozzarella layer.

- Add Meat - Add 1 pound of ground beef, turkey, or chicken to your sauce.

How you you freeze Freezer-Friendly Lasagna in Souper Cubes Trays?

Our favorite way to freeze the Freezer-Friendly Lasagna is with Souper Cubes trays by building and freezing the casserole in three Souper Cubes 2-cup Trays, making 6 portions.

First, layer the ingredients in 6 compartments of the Souper Cubes tray up to the desired fill line. Place the lid on top once the food has fully cooled. Label the lid with our labeling tape or water-based paint makers.

Set the tray flat in your freezer and stack remaining trays on top and freeze. Once the food is solid, you can leave your meal in the Souper Cubes trays, but then that ties up your trays for freezing other meals until you use the components of the lasagna. We suggest transferring the components of each well to a freezer-safe zippered bag, reusable bag, or vacuum sealed bag for longer storage.
How long can I keep my lasagna in the freezer?

We say 3-4 months for optimal freshness. However, as long as it has been consistently frozen, it’s safe to eat indefinitely. For longer term storage transfer frozen cubes to a vacuum sealed bag for best results and to prevent freezer burn.
How to reheat Freezer-Friendly Lasagna?
When it’s time to reheat the lasagna, you will want to pull the tray from the freezer and transfer it to Souper Cubes 5-inch Baking Dish and place in the fridge to thaw. This lets you cut down on the reheating process. However, if you forget to thaw in advance, that’s okay too! The easiest way to reheat from frozen is using your microwave. Place in the microwave and place the silicone cover on (leaving it vented/ajar), microwave on 50% power for 5 minutes to defrost, then place in a 350°F to finish.

Alternatively, you can transfer a frozen lasagna cube to a Souper Cubes ceramic baking dish and bake at 350°F from frozen. It will add additional cooking time if you do not thaw or defrost in advance.
Once the lasagna is baked through, we like to finish the lasagna under a 450°F broil for 2 minutes. Make sure you take the silicone cover off.
Do I pre-bake my lasagna before freezing it?
Our recipe is designed to freeze the lasagna assembled in the trays but not baked. However, you can also bake the lasagna in our Souper Cubes silicone freezer trays if you want to be able to simply microwave it when reheating it later on. This might be a great option if you’re taking your frozen lasagna somewhere without oven access.
