One-Pot Chicken Chili with White Corn Recipe

After college, I moved from California to Philadelphia to become a high school social studies teacher. Far from home and with a seemingly endless pile of essays to grade and lesson plans to create, home-cooked meals became less common in my apartment. One weekend, I decided I wanted to cook something that reminded me of a beloved childhood meal: beef chili using the Carroll Shelby Spice Kit. 

When I got to the Target in South Philly, I realized that they didn't have any of the Carroll Shelby Beef Spice Kits I was used to, but they did have one for white chicken chili. I figured I'd give it a shot so I picked up one box and put it in my cart. Over the years, I've made my own alterations and now have a recipe I love. It's one of the freezer staples in our house and definitely a go-to for my work lunches.

This recipe is great because it's typically a one-pot meal. Though as you can see in the pictures below, I browned the chicken and sautéed the onions/bell pepper in separate pots to speed up the process as I had to run out to run an errand. To make this a one-pot dish, first brown the chicken and then add the onions/bell pepper. 

Step 1: Gather & prep all your ingredients

Note: I doubled the recipe by using two boxes because I love having this as a staple in our freezer for either work lunch or for when we're too tired/busy to cook dinner from scratch. 

Step 2: Brown your chicken

Step 3: Sauté your onions + bell pepper, then add the browned chicken 

To make this a one-pot dish, first brown your chicken. Then add the onions and bell pepper. Mix together and cook for 3-5 minutes until onions and bell pepper have softened.

Step 4: Add spices from Carroll Shelby Chicken Kit 

Step 5: Add diced tomatoes, white corn, beans, and water. Simmer for 20+ minutes (cover pot with lid). 

Step 6: Enjoy! 

Our favorite is to add fresh avocado slices and white corn tortilla chips. If we have time, we also make corn bread as a side. Yummy. 

Step 7: Freeze the leftovers for later

INGREDIENTS:

  • 1 Carroll Shelby White Chicken Chili Kit (Click here to buy
  • 2 lbs. boneless skinless chicken cut into 1/2 inch cubes
  • 1 yellow onion, chopped
  • 1 bell pepper, chopped (optional)
  • 1 cup of frozen white corn
  • 1-15oz can of diced tomatoes
  • 1-15oz can of white cannellini beans
  • 2 tbsp. oil 
  • 2 cups of water

DIRECTIONS: Adapted from Carroll Shelby White Chicken Chili Kit

  1. Brown chicken in oil
  2. Add chopped onions and bell pepper. Stir together.
  3. Add remaining ingredients. Bring to a boil, then reduce to a low simmer for 20+ minutes. Cover pot with lid. Chili will have a thicker consistency when it's done.
  4. Serve with tortilla chips and avocado.
